My suggestion
Hire a scooter and ride from beach to beach or from one scenic vantage point to another. Choose a cliff-edge hotel so you can enjoy views out over the ocean.
Flores and the Sunda islands in general are much less touristic that certain other destinations in Indonesia. Go there to enjoy an authentic adventure in the Indonesian archipelago.
